The grape which Edone Gran Cuvee is born of, comes from our state El Moralejo, with two varieties, 90% Chardonnay and 10 % Pinot Noir.
The harvest is handmade. When the grape comes to the winery, is pressed softly, obtaining the purest must, the flower must. Fermentation is made in little tanks, followed by an ageing part in french oak barrel. Once the spring comes, we bottle this wine to obtain a second fermentation with a mínimum ageing in bottle of 40 months.
Edone means originality, due to the location it is elaborated, and for being Pioneer in its cathegory.
Edone Gran Cuvee was the first wine we elaborated in the Edone range. With it, we set up the principles, the rules and the destiny of Viñedos Balmoral, which are, quality, patiente and the know-how. Later, came Edone Rose Gran Cuvee and Edone Cuvee de Maria.
The Garcia Palazon Familiy’s terroir knowledge, and the implementation of the Herve Jestin’s techniques, recognised as one of the most talented oenologist in Champagne, make every glass of these three Viñedos Balmoral’s sparkling wines an experience worth of repeating.
With Edone Gran Cuvee, we find, a pale yellow colour with golden reflections and fine bubbles with a perfect formation of rosaries. Floral aromas and White fruit, delicious brioche and fresh nuts.
Good estructure with length, tiny bubbles. Memories of dried fruits, hazelnut and a mineral cut. Rounded, elegant and complex.
Its optimum temperature for consumption is around 6º.
It can be accompanied by seafood, iberic ham, creamy cheeses, foie, pasta, rice with fish, oily fish, poultry, and fruit desserts.
The Edone sparkling wines are ideal for any moment, for tasting them since the begining of the meals, or for enjoying them with nothing more.
